A few years ago, my dear friends opened Rastrello, an exquisite boutique hotel in the center of town. Once a month, the hotel’s restaurant welcomes guests and locals for a spaghettata—a pasta dinner—featuring recipes from a local grandmother. When my friends asked me to help turn those treasured nonna recipes into a book, I responded with an enthusiastic “sì!” and I’m so proud of what we created together.       <image:caption>Working with Mourad Lahlou is like doing ecstatic dancing in Converse high tops to a mix of Jay-Z and Berber trance music. The ideas are whirling around faster than you can scribble and the food keeps hypnotizing you in surprising and mysterious ways. We spent a year and a half turning Mourad’s recipes, stories, and self-invented, citizen-of-two-worlds perspective into a coherent, modern take on Moroccan cuisine. I suggested we write two books in one. The first hundred pages is seven hands-on cooking classes on the fundamental building blocks of Moroccan food. I wanted to create the feel of cooking alongside Mourad, with his signature mix of meticulous precision and hilarious, fuck-the-rules-it-just-needs-to-taste-awesome attitude. The rest of the book is the recipes, punctuated by stories, techniques, and surprising takes on tradition.       <image:caption>Tony Gemignani has won 11 world pizza championships. When I heard that, I was impressed. But here’s what made me want to do a book with him: he was first and only American ever to win the World Pizza Cup in Naples. In the Pizza Margherita category. Well, that and eating pizza after incredible pizza at his San Francisco restaurant. Early on in the nearly two years we spent working on The Pizza Bible, I had a revelation. I had been making pizza from what would be the book’s master recipe, and I wasn’t completely loving it. The texture was a little chewy, and the crust didn’t taste right. I told Tony this, and he asked me to make a 2-ball batch and bring it with me to our next working session. Tony took one ball, pushed it out, stretched it, topped it and baked. I did the same with the other one. His turned out fluffy, chewy, and pizzeria-perfect. Mine was tough and the crust was actually less tasty, even though it was made from the same dough. But Trader Vic’s is going strong with 15 bars and restaurants worldwide. When the company approached Ten Speed Press about doing a cookbook, they said they wanted to make their food and drinks retro-cool to a younger audience. I suggested a tiki party theme to tie their famous cocktails, pupus and Vic’s crazy Horatio Alger story all together. I started with Vic’s own autobiography, then sifted through hundreds of articles and documents from the company archives, to write the introductory history section. And I spent many an evening Trader Vic’s in Emeryville, poking around the kitchen and sitting in the lounge, watching the bartenders carefully measure and mix irresistible tropical cocktails. I would order a drink, take a sip or two, and then order it a few more times to watch the process over and over. My notes from each session are a hilarious progression from neat printing and sincere musings to indecipherable, loopy scribbles, stars, flowers and exclamation marks. On his early-morning grocery runs, he kept noticing groups of firefighters carefully picking through stacks of corn, scrutinizing ribs in the butcher case, and discussing the pros and cons of various brands of fish sauce. George started chatting them up and discovered that they take turns cooking every firehouse meal. He asked me to help him whip this idea into a cookbook—a book of easy family-friendly recipes that would reflect the richness of San Francisco’s food scene and the diversity of the SFFD family. We spent a year hanging out in the city’s 42 fire stations, persuading firefighters to share their recipes and stories. It usually went something like this: we’d ask the crew to assemble in the dining room, tell them about the project, and ask them to tell us a bit about what they liked to cook for each other. After a few minutes of awkward silence, we’d hand out some forms and say, “Okay, well, feel free to think it over and email us any recipes or ideas.” Then as we were leaving, a steady stream of men and women would approach us and furtively mumble things like “um…I make…like a cross-between a soufflé and a pot de crème with Frangelico liqueur.” Or, “This is probably not what you’re looking for, but I do a pretty decent Coconut Green Curry Salmon.” Firefighters, it turns out, are unusually humble, unfailingly generous, and remarkably serious about cooking. When we started selling a line of pancake mixes in the early ’90s, we decided to offer a little booklet of recipes on the side panel of each package. Before we knew it, that idea turned into a full-fledged book. Along with diner co-owners Bette Kroening and Sue Conley (later of Cowgirl Creamery fame) I wrote the text and developed many of the recipes, and we self-published The Pancake Handbook as a charming spiral-bound paperback. A few years later, Ten Speed Press discovered the book and we worked with them to create a fully revised second edition. And after a decade of steady sales, we did a newly designed and reworked third edition, which is still selling like hotcakes, and was even translated into French (as the delightfully bizarre sounding Le Manuel des Crêpes!).       <image:caption>That subtitle perfectly describes the time I spent working on one of my all-time favorite projects. They had me at the first meeting at the Kendall-Jackson Wine Estate. No conference room. No Powerpoint. It was a warm Sonoma spring afternoon, and I was seated at a table for six, set with white linens and a promising array of wineglasses in the dappled shade of a walnut tree in the center of the Kendall-Jackson Wine Estate’s culinary garden. As chefs Justin Wangler, Tracy Shepos Cenami, Robert “Buttercup” Nieto, and Culinary Gardener Tucker Taylor told me about their dream of a book showcasing their food and farming philosophy, a series of platters appeared that did most of the talking for them. Roasted leg of lamb from a nearby ranch with green garlic salsa verde, a purple potato salad with olive and nasturtium tapenade, Tucker’s signature “Farmer T’s” lettuce mix with soft herbs and flowers. A fluffy cherry clafoutis flavored with tarragon. Each course was perfectly matched to a complementary Jackson Family wine.  And the vegetables! Sure, they looked lovely. But each time you took a bite, your face would change because these vegetables have more intense flavor and snap than you ever imagined possible. This turned out to be one of my favorite books to work on and to give to friends. It’s a collection of unusually good, remarkably simple recipes showcasing four seasons of fresh produce, created by chefs whose job is to start with a wine and then create a dish that makes that wine sing. Over the course of a year and a half, I got to spend time with this delicious group of people, hanging out, eating, cooking, tasting, interviewing, kibitzing at photo shoots and design reviews, truffle hunting, helping cater a banquet for a hundred sommeliers at a vineyard in Oregon, and most of all, learning. My own cooking changed forever, and I’m forever grateful. It was loved, venerated even, for its food. So a Marshall Field’s cookbook, featuring all the classic recipes from The Walnut Room and other venues as well as recipes from the celebrity chefs of the Field’s Culinary Council (including Rick Bayless, Tyler Florence, Todd English, Nancy Silverton, Ming Tsai and Marcus Samuelsson among others) seemed like a good idea. Catherine Jacobes and I conceived, researched, wrote, designed, shot and published the book under our Book Kitchen imprint. It turned out to be an even better idea than anyone expected. What we didn’t know during the year we were developing the book was that it would hit the shelves in all of the company’s stores just months before the company was absorbed into Macy’s and the Marshall Field’s name would vanish forever. In the landrush that followed that announcement, Field superfans flocked to the store, grabbing anything with the company’s logo they could get their hands on. The book, with its history of Field’s and beautiful location and food photos by Maren Caruso, was the keepsake everyone wanted. Reprinted twice, including in a boxed, clothbound collector’s edition with a brass Field’s plaque on the cover, it sold more than 163,000 copies and became the most profitable SKU in the entire chain.       <image:caption>Every year, 3.5 million people line the streets of New York to watch the Macy’s Thanksgiving Day Parade, while another 53 million tune in at home. That’s one sixth of the American population! So, we were pretty excited when the head of the Parade Group contacted ­Book Kitchen, following the success of our Macy’s Great Gatherings cookbook, to do a cookbook commemorating the parade’s 85th anniversary. For the recipes, we worked with the superstar chefs of The Macy’s Culinary Council, assigning each one a themed chapter featuring their favorite Thanksgiving and holiday recipes. And for the section on the parade’s history and behind-the-scenes madness (who knew that Manhattan streetlamps are hinged, so that once a year, they can be swung out of the way to accommodate Snoopy and his fellow balloons?), I dug through the Macy’s archives in New York to unearth rare photos, documents and ephemera.       <image:caption>Camping food used to be hamburgers, hot dogs, and hobo-pack potatoes. But now that the world’s gone food crazy, someone needed to speak for the growing legions of people who want to eat something really great in the great outdoors. So a group of us got together and started thinking about how camping cooking differs from kitchen cooking. And then we started devising recipes specifically designed for two-step prep—at home and out in the woods. When you start reworking food in this way, it turns out that with the right strategy, you can make almost anything in the wild. Like baked ziti that cooks up rich and bubbly—and even a little smoky—right in the embers of a campfire. We started developing ideas, writing recipes and text, and shooting the photos ourselves. Full disclosure: I’m not a camper. But I’m really proud of the solid strategy, the great food, the design, and especially the imagery we created together.
