Spaghettata

Panicale is a medieval hill town in Umbria, that has been called one of the most beautiful villages in Italy—and not just by me, though I admit I’m biased, since I’ve also called the place my second home since 2000. A few years ago, my dear friends opened Rastrello, an exquisite boutique hotel in the center of town. Once a month, the hotel’s restaurant welcomes guests and locals for a spaghettata—a pasta dinner—featuring recipes from a local grandmother. When my friends asked me to help turn those treasured nonna recipes into a book, I responded with an enthusiastic “sì!” and I’m so proud of what we created together. More than a cookbook, it’s a tribute to our town’s beloved elders, with recipes for the region’s favorite pastas and traditional local desserts, along with tips, techniques, and tidbits of nonna wisdom.
